Girolomoni pasta is produced in an Italian manufacturing facilities with totally organic processes. Only raw materials of Italian origin and organic spring water drawn from a source that is not polluted by industrial agriculture are used to produce the dough. The wet and fresh pasta is then dried slowly, at low temperature (never exceed 65°C) for long period, to ensure the nutritional goodness, taste and texture of the pasta at its optimum quality.

The flour is meticulously selected for the pasta making, following the constant dialogue between farmers, millers and pasta makers, to provide as many nutrients, flavours and aroma.

5. Quality control from field to pasta

The cooperative is a fully organic farm in compliance with EU regulations. To guarantee the full traceability of the finished products, all the processing stages for Girolomoni organic pasta and products are controlled right from the raw materials through to the finished product.

 

6. Own milling with state-of-the-art technology

Girolomoni built their mill in 2019, alongside the pasta factory on the Montebello hill, the crowning point of Gino’s dream. Girolomoni select the best organic wheat varieties, grind them in the mill and mix them with hillside spring water in the adjacent pasta factory, which is dedicated to making Girolomoni pasta.

 

7. Slow drying process

The slow drying process can last from 7 to 12 hours according to format, at an average temperature of 65
degrees. The heat needed by the drying process is generated by a biomass system, powered by local virgin wood chips. The whole process is guided by the wish to preserve as much of the quality of the wheat as possible, and one of the most delicate stages is drying.

Gino Girolomoni – the dream of the mayor, poet and farmer

Gino Girolomoni, the founder’s idea was to restore life to a hill, by growing and transforming wheat into pasta in a single place. That was how Girolomoni farming cooperative started, where production is 100% organic. As the pioneer of organic agriculture in Italy, from growing Italian wheat and making wholemeal pasta, he was able to trigger the rebirth of the entire area. His life is the story of his dream: restoring dignity to the land and to those who protect it, the farmers.

The pasta completes a journey before it reaches your table. It’s good because we know where and how the wheat is grown, Girolomoni mills it and knows every part of it. Then they mix it and dry it intelligently and thoroughly, using the technology brought in, and guided by the principle of always respecting ingredients and nutritional qualities. It is the result of continued dialogue among farmers, millers and pasta makers for bespoke recipes for the pasta.
